Pumpkin Overnight Oats

Hey there. It’s been a crazy week over here, and yesterday was particularly hectic. I considered taking the week off and completely skipping today’s blog post, but I had already put this Pumpkin Overnight Oats recipe together for you so I’ll go ahead and share it.

I haven’t always liked overnight oats because I feel like they typically turn out pretty bland and boring. And I’m too much of an oatmeal fan to settle for flavorless oats!

I think what makes the difference for me is yogurt. It adds so much more flavor than the typical milk and chia seeds situation. I completely skipped the chia seeds in this recipe, but feel free to throw some in! (And maybe add another couple tablespoons of milk for them to absorb.)

Another quick note: I used local honey as the sweetener in this recipe. We picked up a jar at the farmers’ market a few weeks ago, and we’ve been adding it to all kinds of things. If you really wanted to go full-on-fall with this recipe, replace that honey with maple syrup!

Pumpkin Overnight Oats

These seasonal overnight oats pack in fun fall flavor with pumpkin and spices, and they only take 5 minutes to throw together!

Ingredients

  • 1 cup old-fashioned oats
  • 3/4 cup milk (I used almond milk.)
  • 5.3 oz Greek yogurt or skyr (I prefer vanilla Siggi's brand.)
  • 1/4 cup canned pumpkin
  • 2 tsp honey or maple syrup
  • 1 tsp pumpkin pie spice
  • 1 tsp vanilla extract

optional toppings

  • pumpkin pie spice
  • pepitas or nuts

Instructions

  1. Add all ingredients to a jar and mix thoroughly. Cover and store in the fridge overnight. Top as desired and serve.
