Strawberry Kiwi Salsa

Y’all, I hesitate to even call this a recipe. With three ingredients and no actual cooking, this Strawberry Kiwi Salsa is more of an idea, really. I think that’s okay though because sometimes an easy snack idea is just what I need.

I’ve had “fruit salsa” penciled in on my blogging schedule for this week for a handful of months now because, you know, Cinco de Mayo. I have absolutely no self-control when it comes to chips and salsa. I’m not totally sure why I bother to order a plate of food when I eat at Mexican restaurants because by the time my meal arrives, I’m typically too full from the chips and salsa to eat much more.

Yes, I’m that girl who will go out to eat at a Mexican restaurant with you and leave you wondering why all the chips are gone already. You see, there’s an underappreciated benefit to being more of a listener than a talker in most conversations. While you’re busy telling me your story (and I’m intrigued, really, I am) I’m listening and shoveling incredible amounts of salsa down my throat. You finish your story, and BOOM, only a few crumbs are left in the basket and the salsa bowl has been scraped dry. I’m a little bit sorry about this.

I wanted to take this recipe a different direction from your typical restaurant salsa, so that’s why I decided on this fruit salsa. (Although, if a tomato is truly a fruit, wouldn’t it stand to reason that all salsa is fruit salsa?) I ran through several fruit combination ideas in my head, but I think all those years of sipping juice pouches full of Strawberry Kiwi Capri Sun as a kid convinced me that strawberry & kiwi is the best possible combination.

Never mind the fact that I think I’m mildly allergic/sensitive to kiwi. It makes my throat burn. I think the skin of the kiwi is most of the problem because if I remove it, it typically doesn’t burn like that.  I’ve Googled this as much as anyone would Google anything along the lines of “Is it just my body that does this weird thing or is this completely normal?”

Strawberry Kiwi Salsa

Ingredients

  • 3/4 cup diced strawberries
  • 3/4 cup diced kiwi
  • 1-2 tbsp lime juice (to taste)
  • 1/2 tsp lime zest (optional)

Instructions

  1. Mix all ingredients together, and store in the fridge until ready to serve. Serve with salted tortilla chips or cinnamon sugar chips.
