Perfect for a sick day, a rainy day, or any day of the year, this bright spin on classic chicken soup perks up the flavor with fresh cilantro and lime!
Add coconut oil and onion to a pot over medium heat. Cook until onions are soft, about 5 minutes.
Add garlic and ginger. Cook one minute.
Add carrots, chicken broth, and optional salt. Bring to boil.
Add diced chicken. Boil for 5 minutes, then lower the heat and simmer for 15 to 20 minutes. (Carrots should be fork tender.)
Remove 1 cup of the broth. Blend with the cilantro completely. Add back to pot, along with lime juice. Serve.
